The fatty acid profile of our Salicornias shows a significant concentration of palmitic acid and that more than 50% corresponds to OMEGA 3 essential fatty acids (Ac. Linolenic) and OMEGA 6 (Ac. Linoleic)!!
The intake of these unsaturated fatty acids is very important because our body cannot produce them on its own, so it must obtain them from food. Salicornia is not only known for its salty and pungent taste, but also for its high content of phenols, flavonoids, alkaloids, minerals, and antioxidant vitamins (Seo 2010).
The complete composition of this plant is due to the mechanisms of adaptation to salt stress. Living in brackish environments, it compensates by accumulating sugars such as fructose, glucose, and sucrose in its leaves. (Parida et al., 2002). In addition, as a result of salt stress, it generates antioxidants, enzymes, polyphenols, ascorbic acid, ß-carotenes and ureids. (Parida & Das, 2005).
This plant also has an antibacterial, hepatoprotective, antidiabetic, anti-carcinogenic, and anti-inflammatory effect and reduces cholesterol levels (Seo 2010).
